Passover is my favorite holiday! I just love its meaning, traditions, flavors, and of course—matzah.
While most of my friends are more than ready to say goodbye to matzah by the end of Passover, I’m one of those people who actually enjoys snacking on it every once in a while year-round. Over the years, I’ve experimented with all kinds of matzah-based recipes, finding new ways to enjoy this unleavened classic.
One of my favorite (and relatively healthy) creations is Matzah Pancakes—a simple, nutritious, and delicious dish that’s perfect for Passover.
Recipe
Batter Ingredients:
• 5 matzot
• 12 eggs
• 16 Medjool dates (pitted)
Instructions:
- Soften the matzot – Lightly wet all five matzot by quickly passing them under running water. Set them aside for a few minutes to allow the moisture to soak in.
- Blend – Break the softened matzot into pieces and place them in a blender. Add the eggs and pitted dates. Blend until smooth.
- Cook – Heat a pan over medium heat and add a bit of olive oil (or your preferred cooking oil). Pour small amounts of batter into the pan and fry until golden brown on both sides.
- Enjoy! – Serve warm and savor these unique Passover pancakes. They’re naturally sweet from the dates and packed with protein from the eggs, making them a perfect holiday treat!
